If you have spent any time on the Jersey Shore, you have probably heard someone say, “Let’s do FINS.” For more than 23 years, co-owners Shawn and Pat have turned FINS – TropiCali Cuisine into a go-to for fresh flavors, fast service, and a family vibe that keeps customers coming back from childhood into parenthood.
On this episode of Grit Won’t Quit, Tom sits down with the duo to dig into the origin story, the growing pains, and the big vision for what comes next.
From Culinary School Buddies to Local Brand Builders
Shawn and Pat met young, worked side by side in restaurants, then sharpened their craft at Johnson & Wales and the Culinary Institute of America. Their first concept together, back in the late 80s, pushed flavors the Shore was not quite ready for yet. The idea stuck though, and years later FINS brought that Caribbean meets West Coast energy to Bradley Beach.
“Bradley was our first store. The building was there, the timing felt right, and we knew there was a need.”
Today you will find three FINS locations within an easy drive: Bradley Beach, Sea Girt, and Point Pleasant. Ask regulars and they will tell you the same thing every time: it is consistent. That is not an accident. Pat standardized recipes and prep so the line focuses on speed and accuracy, not seasoning on the fly. Walk into any shop, the burrito you love will taste like the last one, and the next one too.
Why FINS Lasts: Value, Consistency, and The Little Extras
FINS aims for a sweet spot that is harder to hit than it sounds. Top quality ingredients, generous portions, prices that work for lunch with friends and dinner with the family.
“We always wanted to be that place where you can come for lunch, then bring your family back for dinner.”
The brand sweats the details. Grab tacos or a burrito and you get chips and salsa included, something many places upcharge for. Dining rooms are clean, orders are accurate, and food holds up when you take it home. Which brings us to the next pillar of their success.
Built For Takeout Before Takeout Took Over
Long before takeout dominated the industry, FINS designed its menu and systems to travel well. Containers are chosen intentionally, items stay hot, textures hold. When third-party delivery exploded, FINS already had playbooks in place.
“Our bags are closed and sealed with tamper stickers. We cannot control every step once it leaves the store, so we do everything we can before it goes out the door.”
They still encourage customers to order through their own site for the smoothest experience, yet they are pragmatic about the role delivery apps play. Used wisely, those channels can extend reach without compromising standards.
The People Side: Hire Right, Train Well, Keep Them
Ask Shawn and Pat about their biggest challenge and they will tell you it is not a secret ingredient or a trendy menu hack. It is people. Hiring, training, and retaining the right team matters more than anything.
New front-of-house staff go through at least seven training shifts and knowledge checks, not to punish, but to prepare. The culture aims for balance, which is rare in restaurants. General managers top out around 44 hours per week, holidays like Thanksgiving, Christmas, and Easter are off, and schedules rotate to protect weekends when possible.
“We learned what we did not like about the industry and built the opposite. You do not keep good people if you burn them out.”
That approach shows up in guest experience. Orders are packed right, catering runs smoothly, and the tone at the counter feels warm, not rushed.
Generations of Regulars and a Smart Review Mindset
When you have been open this long, you see kids grow up and return with kids of their own. That is not just nostalgia, it is a moat. FINS protects it by treating feedback like fuel.
“Ninety-nine percent of our reviews are positive, and we pay real attention to the one percent that are not. We fix problems the same day. No IOUs.”
They would prefer guests call or speak to a manager before posting a negative review. When issues do hit social, they respond, learn, and adjust training or process so it does not happen again.
Choosing and Growing Locations The Right Way
Bradley Beach came first, then Point Pleasant and Sea Girt. The Point Pleasant shop lives in a former bank, complete with a massive old vault that now serves as the storeroom. The three-store footprint sometimes feels like “too big to be small, too small to be big,” but it suits their standard for quality control.
Growth has been steady and selective. Which leads to the most exciting part of the conversation.
The Next Chapter: Franchising FINS
FINS is now exploring franchise opportunities in New Jersey, Pennsylvania, and Delaware, with a preference for openings within ten miles of current stores to tap into built-in awareness. The model is designed to be teachable and repeatable, without losing the soul of the brand.
“We are not looking for a monthly fee and a handshake. Franchisees join the family. We have a vested interest in them being successful.”
Ideal partners are hands-on operators who align on values, people, and process. The hours are restaurant friendly, the menu is operationally tight, and the brand equity on the Shore is real. In the right markets, the opportunity is compelling.
What Restaurateurs Can Steal From FINS
1) Design for takeout at the menu level. Choose recipes and containers that hold temperature and texture.
2) Standardize prep, then teach assembly. Quality comes from repetition, not heroics.
3) Price for value, communicate the extras. Chips and salsa with tacos is not trivial, it is a branded touch.
4) Train like you mean it. Clear tests and checklists protect the guest and the team.
5) Treat reviews as free R&D. Respond, resolve, retrain, move on.
6) Grow slower, grow better. Culture compounds when you pick locations and partners with care.
